White Christmas Rocky Road

White Christmas Rocky Road

Christmas must be on the way!

Rocky road would have to be one the most requested recipes at Christmas time. Many moons ago, I recall my introduction to “White Christmas”. It contained around seven ingredients – none of which were chocolate. It contained ; Copha – a popular vegetable shortening / solidified coconut oil, rice bubbles/puffs, coconut, milk powder, dried fruits, icing sugar and glacé cherries to decorate. We have evolved somewhat. Don’t get me wrong, there’s a sense of nostalgia in making the original. What I don’t like about the shortening is the mouthfeel it leaves. This white Christmas rocky road is a new spin on a classic treat.

Make it merry.

Avoid complicating this confectionery. In previous years, I have. I admit it. I’ve added way too many ingredients that can get lost. This recipe for White Christmas Rocky road will steal the show. I think of it as a classic re defined. A few of my favourite lux ingredients, the pistachio nuts, the really good white chocolate, the pomegranate Turkish delight mixed with fluffy white marshmallows, cranberries and an ode to the original “White Christmas” – the rice bubbles. I love the crunch the rice bubbles add to this sweet delight.

Whether you’re old – school or new – school…do your own thing because you can with this recipe.

It’s a simple melt + mix, if you don’t like pistachios , sub them out for the nuts you prefer. If you don’t want the Turkish delight (I have no idea why!) then replace it with something else. Extra marshmallows, biscuits or honeycomb can be a great alternative. Pull out all the stops, make it your way and have fun with it. Make it as show stopping as you like or keep it simple and traditional. Whatever your choice, it makes a lot of people happy!

DIY TIP || Gifting idea (please see notes below)

  • I bought some cellophane sleeves online, cut fluoro board to fit and created a colourful package to gift to family and friends.

Notes

*A double boiler consists of a medium sized saucepan filled with water, only a 1/3 of the way up, then place a heatproof bowl on top, ensuring it doesn’t touch the water level. Bring the water to a simmer, then reduce the heat to its lowest setting ,then place the chocolate in the bowl to melt very slowly otherwise it may seize if it’s too hot.
* Washing the cornstarch off the Turkish delight helps the melted chocolate to stick to it. You’ll find if you dry it quickly using the paper towel, you can cut it up quite easily.
* This amount makes roughly 60-65 cube sized pieces depending on how you cut it.
*I weighed out 250gms per bag and it made 6 bags exactly as per the pic above.
*The bags I used are called “block bottom cellophane bags” and they have a “gusset” on the side which creates more space.
*The fluoro board is from “Officeworks” (AU).
